NEW DELHI (Diya TV) — Air India has rolled out a major refresh of its in-flight meal menu on key international routes, expanding its selection of Indian and global dishes as part of its ongoing transformation plan. The airline says the upgrade is designed to improve food quality, enhance customer satisfaction, and offer a more personalized dining experience across all cabin classes.

Air India has introduced the updated menu on most long-haul flights departing from India. The rollout covers flights from Delhi to London Heathrow, New York, Melbourne, Sydney, Toronto, and Dubai. It also includes routes from Mumbai and Bengaluru to San Francisco, and from Mumbai to New York. The airline plans to extend the changes to the remaining international and domestic sectors in the coming months.

The refreshed in-flight meal program marks one of the airline’s biggest upgrades since it began revamping operations under its new management. Air India aims to modernize its services while strengthening its reputation for hospitality.

The new menu features a wide range of dishes inspired by regional Indian cuisines. Air India now offers Awadhi Paneer Anjeer Pasanda, Murgh Massalam, Malabari chicken curry, Rajasthani besan chilla, and malai palak kofta. The airline says these additions reflect India’s culinary diversity and respond to strong customer demand for authentic flavors.

Younger travelers can expect menu items curated specifically for them. Options such as chicken bibimbap and matcha-based desserts give families more variety during long flights.

Along with Indian dishes, Air India has expanded its global options. The menu includes Japanese teppanyaki bowls, citrus tiger prawns, Seoul-flamed prawns, manicotti forestiere, and a selection of Mediterranean cold plates. These additions aim to appeal to international passengers and frequent flyers who prefer lighter or more familiar meals. The airline says the new dishes were tested extensively to ensure quality, freshness, and consistency at high altitude.

Air India continues to offer more than 18 special meal types. Passengers can choose from vegan, gluten-free, and allergen-conscious options. Travelers can pre-select meals through the Air India mobile app. The app also lists allergen details to help passengers make informed choices. The airline says this focus on dietary needs will remain central to its food and beverage strategy.

Chef Sandeep Kalra recently joined Air India and oversaw the menu redesign. His team worked closely with catering partners to refine recipes, simplify preparation, and improve presentation. Cabin crew also received additional training to align with the airline’s new service standards.

Rajesh Dogra, chief customer experience officer, said the changes reflect Air India’s commitment to innovation. He emphasized that the upgraded dining experience is part of the company’s broader goal to elevate service across the board.

Every cabin class will see noticeable changes. First Class passengers will receive expanded multi-course meals along with a wider dessert and beverage selection. Business Class travelers will have customisable meal components that allow greater control over their dining experience. Premium Economy and Economy Class will now feature updated regional options and improved tray layouts for easier dining.
